Description
The "Vallformosa" reserve brut cava is a cava made with a blend of the Macabeu, Xarel·lo and Parellada varieties from the region's oldest own vineyards.
The harvest is both manual and mechanical. Macabeu was harvested at the beginning of September, Xarel·lo in mid-September and, finally, Parellada during the first week of October. Regarding the preparation, the first fermentation is carried out in stainless steel tanks at a controlled temperature of 14-16ºC. Instead, the second fermentation is in the bottle by the Traditional Method.
This cava is aged for 12 months on its mothers.
