How to cook the beans:
The night before we soak them in cold mineral water. We put enough water to cover them, we have to think that the beans grow.
The next day, put new water in the saucepan, a handful of salt and put them on a low heat. The act of cooking on low heat and the salt is to prevent the skin from separating from the bean.
When they start to boil, we'll see that there's a bit of a joke, we'll take it out with a spoon.
Add spices to taste: bay leaf, onion, cloves... (optional).
Let's cook for approximately 1 hour 30 minutes over low heat, trying to avoid boiling over high heat, so that the beans don't break.
It is important not to stir the pan, but to shake it. Since the crochet beans are fragile and we must try not to break them.
